Garlic Butter Red Potatoes are simple enough for every day and fancy enough for company.
This is not a complicated recipe but really dresses up basic potatoes. We love garlic butter red potatoes any time. They are delicious with Lemon Herb Baked Fish, Grilled Marinated London Broil or Coconut Buttermilk Southwestern Chicken. Really, they dress up any plain meat very nicely. These measurements are just guidelines. Put on as much or as little of the extras as you like. I don’t usually peel red potatoes but I do cut out any eyes or blemishes.

3 pounds (about 8 medium/large potatoes) of red potatoes
1 stick (1/2 cup) butter
½ tsp garlic powder
¼ tsp salt
1 tsp parsley
Wash, remove any blemishes and cut potatoes into chunks. Peel if you want but it is not necessary.
Bring potatoes to boil then reduce heat to simmer for 15-20 minutes until soft.
Drain potatoes, add butter, garlic powder and salt and combine gently.
Sprinkle with dried parsley and serve.
