Lemon Rice Delicious with the little tang of lemon!

Lemon Rice is hearty rice with a little tang of lemon!

The lemon in Lemon Rice makes it the perfect compliment to fish. It is also delicious with chicken, beef or alone. Lemon Rice is a nice side dish for company. It is pictured here with Paleo Meatloaf.

ingredients

Ingredients:

1 Tbsp butter or margarine

1 small onion, diced

2 cups rice (not instant)

4 1/2 cups chicken broth

3 Tbsp lemon juice

Directions:

Melt butter in large saucepan over medium heat.  Add onion and sauté for 2-3 minutes or until onion is translucent. 

Add rice and cook, stirring constantly, for 1 minute.

Stir in broth, bring to boil.  Cover, reduce heat and simmer for 20 minutes.

Remove from heat; stir in lemon juice.
