Easy Creamy Egg Salad is low carb, gluten free and dairy free!
My family loves when I mix up Easy Creamy Egg Salad for our lunch. It is often eaten on a sandwich but just as good (or better!) on a bed of lettuce as a salad or in a lettuce “wrap”. I love to have this ready in the refrigerator for an easy lunch. Assembly is so quick when all I need to do is scoop it out onto bread or a salad. It is especially good on a hot day to eat cool, creamy egg salad. Yummy!

8 hard boiled eggs
½ cup mayonnaise
¼ tsp paprika
1 Tbsp mustard
1 Tbsp vinegar
½ tsp salt
¼ tsp pepper
Chop eggs in a mixing bowl. I use a pastry cutter; easy peasy!
Add all other ingredients.
Makes about 2 cups of egg salad
