Pumpkin Pie Oatmeal is a creamy, hearty and nutritious breakfast! Add nuts or fruit for extra variety!
It takes less than 10 minutes to cook up Pumpkin Pie Oatmeal for breakfast. This makes two servings but is easily multiplied for more servings. Use any kind of milk you like and any kind of sweetener. The original recipe calls for soy milk and sugar but we use regular milk and maple syrup. Honey, agave, brown sugar or even artificial sugar would also work fine. We also boost the nutrition even more with slice almonds add to the top. Raisins or dried fruit of any kind would also be great.

1 cup water
1 cup milk
½ cup pumpkin
1 cup old fashioned oats
¼ tsp pumpkin pie spice
2 Tbsp maple syrup or sweetener of choice
¼ tsp vanilla
Sliced almonds or dried cranberries, optional
Combine the water, milk, oats, pumpkin and pie spice in a saucepan.
Bring to a boil.
Reduce heat and cook and stir for 5 minutes.
Remove from heat; stir in maple syrup and vanilla.
Sprinkle with sliced almonds or dried cranberries if desired. Makes 2 servings.
