Black Beans and Ham Freezer Meal is a delicious, healthy, easy meal. 

Black Beans and Ham Freezer Meal is simple and quick to put several together and put into the freezer for easy meals later. This makes 8-10 servings. If that is too much for your family, just divide it into 2 or even 3 or 4 meals. How nice is that? 🙂 It can be a complete meal in itself or serve it over rice.

This recipe is adapted from the book, “Fix it and Forget it Recipes for Entertaining”.

Ingredients:

1lb diced ham

1 cup chopped onion

2 15.25 oz cans black beans, drained and rinsed

1 tsp cumin

1 Tbsp minced garlic

28 oz can diced tomatoes with liquid

1 cup water

 

Directions for freezing:

Dice the ham into bite sized pieces.

Add all ingredients to a labeled gallon Ziploc freezer bag.

Combine well by gently kneading with hands.

Freeze.

Directions for cooking:

Thaw or at least partially thaw.

Put into greased crock pot.

Cover and cook on low 4-6 hours.

Serve over rice.
