Chocolate Banana Oat Bars are a tasty dessert but healthy enough that they could even be breakfast! Oats are for breakfast, right? Yes! With no gluten, no dairy and no eggs, almost everyone can eat these bars.

1 ¼ cup oat flour (or 1 cup oats, ground into flour in a food processor or blender)
½ cup unsweetened cocoa powder
½ tsp baking powder
½ tsp baking soda
3 medium to large ripe bananas
1 tsp vanilla extract
¼ cup honey, agave nectar or maple syrup
1/3 cup chocolate chips, optional
If needed, grind the oats into flour with a blender or food processor.
Whisk together oat flour, cocoa powder, baking powder and baking soda.
Mash bananas well with a fork and add to another bowl.
Add vanilla and sweetener and mix until smooth and creamy.
Add banana mixture to oat mixture and mix until combined. Don’t over mix.
If adding chocolate chips, stir them in gently.
Pour batter into a greased 8×8 baking pan and spread evenly with a spatula.
Bake in a preheated 350* oven for 20-23 minutes or until a toothpick inserted in the center comes out clean.
Cool 10-15 minutes on a wire rack.
