Beefy Lentil Soup is great to have in the freezer!

Beefy Lentil Soup is one of my go to recipes.  It is easy to make and freezes great to have on hand for an easy meal later or company.  I also have a low carb version that I make at the same time; beefy cabbage soup.  It is the same thing without the lentils or carrots; still delicious.

I will sometimes make a double batch to can some up for the pantry.  Freezing is great but it has to be thawed and if it is canned, it can be grabbed off the shelf and is ready to go.  Pressure can at 10 lbs pressure; quarts 90 minutes and pints for 75 minutes.

You could make it in the crock pot too; just use half as much water.

Instructions
  1. Gather ingredients.
  2. Brown your ground beef and onion. Drain.
  3. Rinse lentils. Do this right before dumping them into the pot. If you let them sit very long, they can get glumpy.
  4. Add everything to a large saucepan.
  5. Stir well and simmer for 30 minutes to 1 1/2 hours, depending on how thin your vegetables are diced. You can also cook it in the crock pot but use 2 cups of water.
