Beefy Rice and Mushroom Mix is an easy and delicious mix to have on hand!
I just love having homemade mixes ready to go in my cupboards! All I need to make this yummy, hearty side dish is my premade bag and water; you just can’t beat that. It really does not take much time at all to make up several of these at the same time and then be ready to go for quite a while. I take about an hour every 6 months or so and make several mixes of different rice blends and then I am good to go! It is cheaper and much healthier than those bought in the store too. During my rice mix hour, I also make Chickeny Rice with Almonds and Cranberries, Indian Rice with Cashews and Raisins, Tex-Mex Rice Mix and Curried Rice. That gives us a good supply and variety.

I use brown rice or brown and wild mixed for this recipe because I think it goes well with the mushrooms and beef flavor. It also makes a hearty side dish. If you prefer white rice, you will just use 4 cups of water instead of 5 and cook it 18-20 minutes instead of 45-50 minutes.
Please note that different bouillon, whether cubes or powder, call for different amounts. Just add as much as you would need for 5 cups of liquid for brown rice or brown and wild mixed and enough for 4 cups of liquid for white rice.

This calls for dried mushrooms. I get them and my other dried vegetables for mixes like these at North Bay Trading Co. I highly recommend them (and I get nothing for refering you to them). Keep in mind, a pound of dried vegetables is probably more than you are picturing; it is always a bigger bag than I think it will be.
