Broccoli and Cauliflower Cheesy Bake is healthy vegetables in a creamy sauce.

Cheese just goes with broccoli and cauliflower so Broccoli and Cauliflower Cheesy Bake is going to be good!  We like our vegetables anyway but adding cheese is always a treat.  For anyone who is not crazy about their vegetables, cheese will help them go down more easily.  This is a great low carb dish that I eat instead of macaroni and cheese.  It is just as tasty and so much healthier!  This is simple to put together; just melt some cheeses, add thawed, frozen vegetables and pour it into a dish to bake.  It will bake as you cook the meat or prepare the rest of the meal.  It goes very well along plainer meat like Grilled Citrus Chicken Freezer Meal, Crock Pot Garlic Herb Chicken, Low Carb Not Breaded Chicken, Crock Pot Beef Shanks or  Grilled Marinated London Broil.

Broccoli and Cauliflower Cheesy Bake
Instructions
  1. Gather your ingredients
  2. Melt the cream cheese, 2 cups of shredded cheddar cheese and butter in a microwave safe bowl. I did 1 minute, whisk, 1 minute, whisk and another 30 seconds, whisk.
  3. Add the heavy whipping cream and whisk that into the cheese mixture. It should look like a cheese sauce when you are finished.
  4. Add the broccoli, cauliflower, garlic powder and salt and pepper to the cheese sauce and gently stir together. I did not cook my vegetables and they still had just a little crispness to some of them. If you like your vegetables soft, you will want to steam or boil them a bit before adding them to the cheese sauce.
  5. Spread into a greased 9 X 13 baking dish.
  6. Sprinkle with the last cup of cheese or more if desired and bake for 30 minutes, covered, in preheated 400* oven. Uncover and bake another 10-15 minutes so the cheese will brown.

  1. Can this be prepared a day before and cooked the day it’s needed? Trying to minimize Thanksgiving day prep.

    1. Hi, I have not prepared this one ahead like that but have done it with others that are similar. I would think you could. Just bake it a bit longer since it will be cold to start. 🙂
