Broccoli Casserole

Broccoli Casserole is an easy, make ahead dish for company and special occasions.

This Broccoli Casserole recipe was passed to me from my Mom.  She made it many years with every Thanksgiving, Christmas and Easter dinner and other special occasions.  Now, sometimes our family holidays are at her house and she makes it and sometimes it is at mine and I make it. 🙂 This is part of it every time.  It is a popular birthday dinner request too. Broccoli Casserole is easy and delicious and the best part is that it can be made the day before and just cooked when you need it.  It goes wonderfully with a turkey or ham dinner.  We always want leftovers so I usually make 2 pans.

Instructions
  1. Gather your ingredients.
  2. Cook and drain broccoli.
  3. Mix onion, mayonnaise, eggs and soup and combine with broccoli. Put mixture in greased 9 X 13 baking dish.
  4. Melt butter, add dry stuffing mix and stir well. Add grated cheese and stir again.
  5. Spoon over entire broccoli mixture and bake uncovered at 350* for 30 minutes. The casserole can be refrigerated a day or two ahead of time. If you are taking it from the refrigerator before baking, let it sit out on the counter for 15-20 minutes to take the chill off a little before cooking.
