Crock Pot Steak Fajitas

Crock Pot Steak Fajitas is not your normal crock pot steak and peppers dish!

I admit that when I first made Crock Pot Steak Fajitas, I thought it would like most steak and pepper crock pot recipes but oh my!  This is SO delicious!  It is moist, tender and has a wonderful flavor.  My notes when I made this was A+++.  My guys ate it on a soft flour tortilla but I am eating low carb so just put mine in a bowl.  I did not feel like I was missing a thing!  We topped it with shredded cheese and since we didn’t have sour cream (oops, my bad), we made do with cream cheese.  We decided that was a FINE substitution.  It would also be good with fresh lime juice, hot peppers, avocado or cilantro.

I got this recipe from 100 Days of Real Food’s Slow Cooker Flank Steak Fajitas and made some changes to make it a bit easier.  One way I do that regularly is to use frozen vegetables like peppers and onions and bottled minced garlic.

Instructions
  1. Gather your ingredients.
  2. Combine chili powder, cumin, salt and pepper and sprinkle over steak.
  3. Rub spices into meat well.
  4. Put steak into greased crock pot.
  5. Add soy sauce, chilis, garlic, peppers and onions. (My peppers and onions were even still a little frozen.)
  6. Cook on high 5-6 hours or low 8-10.
  7. Shred meat with 2 forks and combine all together.
  8. Serve on soft flour tortilla with cream cheese, sour cream, avocado, lime, cilantro or hot peppers.
  9. For a low carb option, serve in a bowl with any of the listed toppings.
