Curried Rice Mix

Curried Rice Mix will make a quick easy side dish.

Don’t you love to feel prepared?  I sure do!  When I have homemade mixes in my cupboard and precooked meat in my freezer, I feel like I am set.  Curried Rice Mix is an oh-so-easy side dish and much cheaper and  healthier than the bags you buy in the store.  I love to make these ahead for myself and to share them with my son and daughter-in-law to be helpful when I don’t live close to them.  They also make great gifts.  Other rice mixes we like are Chickeny Rice with Almonds and Cranberries, Indian Rice with Cashews and Raisins, Tex-Mex Rice Mix and Beefy Rice and Mushrooms Mix.

This recipe is from the book, “Meals in a Jar”.  I adjusted the seasonings a bit and I do one bag at a time instead of a big bowl for 12 bags.  I don’t need to do that many at at time.  This is the book.

Instructions
  1. Gather your ingredients, bags and labels
  2. Measure it all into the bag, rice first.
  3. Print out the instructions below, cut them out and tape to bags. Curried Rice Mix Combine rice mix and 4 cups of water in medium pan with lid. Bring to boil over high heat. Reduce heat to a simmer, cover and cook for 15-18 minutes, until water is absorbed and rice is tender. Serves 8
  4. When you are ready to cook it, all you need is water and the rice mix.
  5. Put both in saucepan and follow directions above. You can also use brown rice. Just increase water to 5 cups and cooking time to 30-40 minutes.
