Easy Egg and Potato Casserole is often part of our Christmas Day breakfast. It is a hearty, one dish meal, easy to stir up, serve and good leftover–if there is any left. You can use any meat; sausage, bacon, ham, etc. The pre-cut, frozen potatoes make it so easy and if you cook the meat ahead it is a dump, stir and bake meal. It is delicious too!
This makes two 7X11 dishes. I have tried it in a 9X13 and it is difficult to cook through. If you don’t have a 7X11 dish, just use 2 or 3 cake pans or any smaller dish. If you use more than 2, just lessen the cooking time, as it will cook faster in a smaller dish.
