Easy Egg and Potato Casserole

Easy Egg and Potato Casserole is a hearty dish that can be made ahead of time.

Easy Egg and Potato Casserole is often part of our Christmas Day breakfast.  It is a hearty, one dish meal, easy to stir up, serve and good leftover–if there is any left.  You can use any meat; sausage, bacon, ham, etc. The pre-cut, frozen potatoes make it so easy and if you cook the meat ahead it is a dump, stir and bake meal.  It is delicious too!

This makes two 7X11 dishes.  I have tried it in a 9X13 and it is difficult to cook through.  If you don’t have a 7X11 dish, just use 2 or 3 cake pans or any smaller dish.  If you use more than 2, just lessen the cooking time, as it will cook faster in a smaller dish.

Instructions
  1. Gather your ingredients and spray your pans.
  2. Add eggs to large mixing bowl and scramble them.
  3. Add the rest of the ingredients.
  4. Stir well.
  5. Pour into pans.
  6. Bake in preheated 350 degree oven for 45-50 minutes or until done in the center. It can be cooked ahead and reheated. You could also bake them in muffin pans with 1/3 cup in each for about 20-25 minutes.
