When you need a quick supper, Easy Vegetable Beef Soup is it!
Easy Vegetable Beef Soup is an easy soup to have ready quickly. It is great for a winter soup when fresh vegetables are harder to find. Even if I think of it mid afternoon, I can gather my cans, dump them into the pot and let them simmer for a couple of hours before dinner is needed. Having my meat cooked and in the freezer is also a big help. I thaw it in the microwave at least some and then dump it right in too.
When dumping in the vegetables, dump the liquid in too.
This is delicious with Whole Wheat Quick Bread.
This is wonderful to have ready to go in the freezer! It can also be pressure canned; process pints 1 hour and quarts 1 hour, 15 minutes at 10 pounds pressure.
When I have so many cans to open, I am happy to have my Oxo hand held can opener. Even with my carpal tunnel/fibromyalgia hands, they open easily.
