Gluten Free Salmon Cakes

Gluten Free Salmon Cakes are fancy enough for company but easy enough for any day; they are also low carb and dairy free.

Salmon cakes are often only a treat to eat while dining out but with this recipe, you can easily make them at home any time.  They are also gluten free!  Good luck finding gluten free salmon cakes while dining out!

They can easily be made dairy free too; just fry in coconut oil, olive oil or another fat instead of the butter.

Could I use almond meal?

I tried making them with almond meal but even though they tasted very good, they did fall apart more. The flax meal was much better.  

What is flaxseed meal?

Flaxseed meal is just ground flaxseeds.

Note: I have made this with regular flaxseed meal and golden flaxseed meal. The golden seemed to hold together better than the regular for some reason so use that if you have it. Look at these beauties!

One son was pretty skeptical about the flax meal but he quickly admitted that they were delicious. He had no problem eating several salmon cakes! 🙂

The perfect topping for these is Lemon Herb Mayonnaise

Ingredients:

Ingredients for Gluten Free Salmon Cakes

butter

6 oz cans skinless, boneless pink salmon drained

egg

finely chopped red pepper

finely chopped onion

golden flaxseed meal

mayonnaise

lemon juice

salt

more flax meal to coat for frying

Instructions:

Add everything except butter and extra flax meal to a mixing bowl.

Combine well.

Melt butter in frying pan.

Divide salmon mixture into 8 portions and shape each into a ball in your hand, then flatten.

Coat with flax meal on both sides.

Fry in butter over medium heat (350* on electric skillet) for 3-4 minutes on each side.

Serve with Lemon Herb Mayonnaise or your choice of sauce.

Ingredients

  • 3 Tablespoons butter for frying
  • 2 6 ounce cans skinless, boneless pink salmon drained
  • 1 egg
  • 1/4 cup finely chopped red pepper
  • 1/4 cup finely chopped onion
  • 4 Tablespoons golden flaxseed meal
  • 1/4 cup mayonnaise
  • 1 Tablespoon lemon juice
  • 1/4 teaspoon salt
  • extra flaxseed meal for frying

Instructions
