Gluten Free Salmon Cakes

Salmon cakes are often only a treat to eat while dining out but with this recipe, you can easily make them at home any time.  They are also gluten free!  Good luck finding gluten free salmon cakes while dining out!  I tried making them with almond meal but even though they tasted very good, they did fall apart.  The flax meal was much better.  You still need to handle them gently but they held together well and tasted great.  One son was pretty skeptical about the flax meal but he quickly admitted that they were delicious.  He had no problem eating several salmon cakes! 🙂

The perfect topping for these is Lemon Herb Mayonnaise.  They are pictured with broccoli and Beefy Rice with Mushrooms.

Most recipes call for bread crumbs and honestly, they do hold together better with them so if you don’t need to be gluten free, you may want to use them instead.  Use the same amount as you would of the flax meal.
