Grilled Citrus Chicken Freezer Meal

Grilled Citrus Chicken Freezer Meal is gluten and dairy free!

Grilled Citrus Chicken Freezer Meal is very easy to put together, put in the freezer, thaw when ready and grill.  It is delicious too! Freezing it in the marinade makes it very tender and moist.  The very best way to cook this is on the grill but as we found out with unexpected rain when we planned to have this one night, cooking it in the oven is a fine plan B.  Being gluten and dairy free makes it a great meal to plan for company.

Try it with:

Special Mashed Potatoes

Baked Cabbage and Onions

Roasted Parmesan Asparagus

Creamed Mushrooms

Cheesy Zucchini Boats

Garlic Butter Red Potatoes

Instructions
  1. Gather your ingredients.
  2. Mix all but chicken in measuring bowl. Prepare chicken by cutting off any fat and cutting into medium sized pieces. You don't want huge, thick pieces to grill. If they are very thick, cut in half lengthwise or pound flat. This will help it to cook more evenly. Add chicken to Ziplock bag, pour liquid over and close bag with as little air as possible.
  3. Freeze until needed.
  4. Thaw and grill over medium heat 12-15 minutes or until chicken is no longer pink. Can also be baked in sprayed baking dish for 20-25 minutes or until done.
