Roasted Parmesan Asparagus

Roasted Parmesan Asparagus is the very best way to make asparagus and easy too! Don’t put off trying this delicious, quick to prepare side dish; only 6 ingredients and ready in 20 minutes!

Roasted Parmesan Asparagus is my new favorite way to eat asparagus!  

The flavor is so fresh and delicious!  

We always used to boil our asparagus and loved it that way. . . still do, but this!  Oh my!  

I listed this as a side dish but I could totally make this a meal in itself; no problem!  

I saved a few spears to see how they were leftover and ate them cold the next day. Some I know would not go for cold, leftover vegetables, but I would definitely make this a snack.  

This was even made with February grocery store asparagus so I can’t wait to make it with fresh, spring asparagus.  

I hope that will be out of my own garden this year.  Can’t.   Wait.

In the meantime, I will be checking prices every time I go to the grocery store and anytime they are reasonable, I will be putting a few wonderful asparagus bundles in my cart.

I don’t think I will ever boil asparagus again!

This is very similar to Belle of the Kitchens Garlic Parmesan Roasted Asparagus. One thing I changed is the garlic cloves to garlic powder; it is easier, lower carb and I knew we wouldn’t like chunks of garlic in it.

I posted this recipe over two years ago and can’t tell you how many times I have made this recipe. It is my go-to asparagus recipe.

I have made it for us. For company. For us again and again and again.

I made it at my parents’ house for them, for company and for us again and again and again. You get the idea.

I just have no desire to even try other recipes because we love this one SO MUCH! Well, when you have a winner, why do something else? 

Can it be made Dairy Free, Paleo and Whole 30?

Yes, it would be all of these things and just as delicious if you just leave off the cheese.

My daughter in law prefers it without cheese so I just leave part of the pan without it for her. Sometimes I have several sections so everyone has it just how they like it. It is a recipe that you can do that with.

A Shortcut:

I also make this recipe with broccoli and green beans so I keep a mixture of equal parts of salt, pepper and garlic powder in a container so it is easy to grab and use. This recipe is already very easy but that makes it even easier! 

Ingredients:

extra virgin olive oil

salt, pepper and garlic powder

grated Parmesan cheese

Instructions:

Rinse the spears and cut off the end pieces. I take a sharp knife and cut where it starts to “give”, cutting off the hard ends.

Put spears on a foil lined baking pan.

Drizzle olive oil over spears and toss them a bit to coat them well. Use your hands if you need to.

Combine salt, pepper and garlic powder and sprinkle over asparagus. It goes on much more evenly if you combine them first. I use my hands for this step too. It goes on nice and evenly when held between my fingers and sprinkled on.

Roast in a preheated 375* oven for 12 minutes.

Remove from oven to sprinkle parmesan cheese over spears.

Roast another 3 minutes or so, depending on how crisp you like them.
