I once had a friend named Solita who made the BEST spanish rice. She is still my friend on Facebook but sadly, many miles between us have stopped the weekly interaction we once had. Quite a few years ago she wanted to make a dinner for us and asked what I would like her to make. There was no question in my mind–her spanish rice! I asked her if I could come and watch her make it so I could learn to do it for my family. She so sweetly showed me just how she did it. I don’t think mine has ever tasted quite as good as hers somehow but I carefully took notes and have made it many times since then. Now I want to share it with you. It is just the right combination of fluffy rice, tender chicken, slightly crunchy peppers and onion and a little zing of lemon. Mmm!
Start the rice first and by the time it is finished cooking, you can have the chicken and vegetables mostly ready. This takes less than 30 minutes to have ready. It is great with a salad or a green vegetable but very good and totally satisfying on its own too.
