Spinach Ham Quiche

Spinach Ham Quiche is a delicious, make ahead breakfast!

This Spinach Ham Quiche recipe makes two pans of quiche, which is perfect since the pie crusts come in a 2 pack and also because you can eat one now and freeze one for later. It reheats easily in the microwave without having a “leftover” feel or taste. It is just as delicious the second-or third day.  The recipe calls for ham but you could use any meat you would like. It is important to have the deep dish crusts or they will be overflowing. I have gotten the regular ones before so just greased a small baking dish and baked the rest as a no crust quiche. It worked just fine.

It is also important to cover the crust edges or they will burn before the inside is cooked. You can use small strips of foil tucked around or these handy covers. I don’t use them often, but when I do, they are well worth the small cost they were and the space they take in the kitchen. They do a very good job at keeping the crust from getting too brown and are so simple to just lay over the pie.

You also want to be sure to drain your spinach well.  I just carefully squeeze the open bag over the sink while holding my hand around the neck of the bag to keep the spinach from falling out.

Spinach Ham Quiche
  1. Gather your ingredients.
  2. Add eggs, milk and soup to bowl.
  3. Whisk together well.
  4. Add ham, spinach and cheese to egg mixture.
  5. Mix well again.
  6. Pour into two unbaked deep dish pie crusts.
  7. Add crust protectors to keep crust from getting too brown. You could also cut strips of foil and fit around the edges.
  8. Bake in preheated 350* oven for about an hour but maybe more. Check the middle to be sure it is cooked through.
  9. Eat both or cool and then wrap one well in plastic wrap and then foil, label and freeze until you need it later.
