Taco Tortilla Bake is an easy to make delicious burrito in an easy to serve casserole.
Taco Tortilla Bake is a long time favorite in our house. We even like leftovers for breakfast. It is a great freezer meal too! Make it ahead, cook it and then freeze or just freeze the leftovers. Either way works. It is all of the burrito ingredients in a casserole. That makes it easy to put together; no individual burritos to roll up. It is also easy to serve and clean up since you have only one dish. This kind of recipe just makes dinnertime easier!
The original recipe was called Zippy Tortilla Bake but we had to change the name at our house because my 6 year old had a hamster named Zippy—Zippy Houdini to be exact. The look on his face when I told him what we were having for dinner was quite enough for a recipe name change! Poor kid!
I had it easy with this meal because I had the taco meat already cooked up. It was still frozen solid when I decided what to have for dinner but 90 seconds in the microwave fixed that problem. Yay for microwave thawing and yay for precooked meat! See my taco seasoning recipe here.
