Easy Creamy Egg Salad is low carb, gluten free and dairy free!

My family loves when I mix up Easy Creamy Egg Salad for our lunch.

It is often eaten on a sandwich but just as good (or better!) on a bed of lettuce as a salad or in a lettuce “wrap”.

I love to have this ready in the refrigerator for an easy lunch. Assembly is so quick when all I need to do is scoop it out onto bread or a salad.

It is especially good on a hot day to eat cool, creamy egg salad. Yummy!

Ingredients:

hard boiled eggs

mayonnaise

paprika

mustard

vinegar

salt

pepper

Directions:

Chop eggs in a mixing bowl. I use a pastry cutter; easy peasy!

Add all other ingredients.

Mix well.

Serve.

Makes about 2 cups of egg salad

  • 8 hard boiled eggs
  • ½ cup mayonnaise
  • ¼ tsp paprika
  • 1 Tbsp mustard
  • 1 Tbsp vinegar
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Chop eggs in a mixing bowl.
  2. Add all other ingredients.
  3. Mix well.
  4. Serve.

Notes

I think the calories are calculated a bit high on this; it is pretty much 2 eggs and 2 Tbsp of mayo per serving and the rest of the ingredients add very few calories. Double check that if it is important to you.
