Cheesy Bacon Baked Squash is a delicious, gluten free, low carb side dish! Made with squash, cheddar cheese, bacon and seasoning and topped with sour cream.
Cheesy Bacon Baked Squash is well, just what it sounds like. It is cheese and bacon smothered squash.
Now doesn’t that sound wonderful? It is! 🙂
Add some sour cream and some sliced green onions when serving and it is a amazing side dish.
This recipe is adapted from delish.com’s Loaded Zucchini Skins. The skins were just really hard and we didn’t like that at all so I made some changes. Now we think it is just right. 🙂
There is so much you can do with squash! And it is a good thing because if you have a garden, or your neighbor has a garden, or your parents have a garden. . . you get the idea.
It is wonderfully prolific stuff! And that is OK because there is so much you can do with it!

How to Peel the Squash
Leave the peel on, peel it completely or peel it partially to leave zebra stripes; whatever you like. The zebra stripes leaves on some of the nutritious peel without being too much. I usually do it that way.
A Hint if you have especially large Squash
Squash or Zucchini are really best when they are picked and used when they are small. They can go from perfect to baseball size almost overnight though so it is easy to be left with some bigger than ideal. I have found that just removing the seeds helps a LOT in making those big ones taste good.
In this recipe, I have used big ones. I peeled it, took the seeds out and sliced it into smaller pieces then prepared as usual the rest of the way. It was still delicious! Here is what it looked like then.
Ingredients:

cooked and crumbled bacon
yellow squash or zucchini
olive oil
garlic powder
onion powder
Salt and pepper to taste
shredded cheddar cheese
Serve with sour cream and some sliced green onions.
Directions:
Peel squash, peel partially or don’t peel; however you prefer.
Slice squash in half.
Put squash into a baking pan.
Coat halves with olive oil.
Combine garlic powder, onion power, salt and pepper and sprinkle on tops of squash.
Bake in a preheated 400* oven until tender, about 30 minutes.
Top squash with cheese and bacon.
Bake another 15 minutes or so until the cheese is bubbly.
Serve with sour cream.

- 2 pounds yellow squash or zucchini
- 1 Tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Peel squash, peel partially or don't peel; however you prefer.
- Cut squash in half.
- Put squash into a baking pan.
- Coat halves with olive oil.
