Peanut Butter Jelly Fat Bombs: Fat bombs with sweet, creamy peanut butter and jelly too! Turn off those cravings for a PBJ with these delicious bites!

I was never a huge peanut butter and jelly eater but every now and then I just want a PBJ. These peanut butter jelly fat bombs totally satisfy that craving.

My favorite way to eat them is to pop the whole thing in my mouth and let it slowly melt. Mmm!

If you have kids on Keto and they are like mine, especially like my youngest, you definitely need this recipe! We homeschooled and when I taught my youngest about butterflies laying their eggs near the plant that they knew their babies would eat when they hatched, I always told him that if we were butterflies, I would have laid him next to a PBJ plant. 😊 He still loves his PBJ and he is 21 years old now.

The peanut butter:

I did not label these as “Keto” fat bombs because, technically, peanuts are legumes and therefore not strict Keto. SO! If you are strict Keto, you will want to replace the peanut butter with almond butter or even sunflower butter.

If you are dirty Keto, low carb or know that peanuts do not bother you (sometimes legumes are inflammatory), then by all means, use the peanut butter.

This is the lowest carb brand I have found and it is very good too. It is $3 a jar at my Walmart and a 16 oz jar will make 1 1/2 batches of this recipe.

**Please note that on 9/19/20 I changed the post to Crazy Richards brand from Walmart brand because it was brought to my attention that Walmart change their label. It had said it was 4 carbs and 3 fiber so 1 net carb per serving and therefore the lowest peanut butter out there but when the label changed it now says it is 7 carbs and 3 fiber so 4 net carbs per serving! OH, that is not nice! I had to redo the macros based on the new best peanut butter.

I found Crazy Richards and also one called Santa Cruz at Walmart; both have 5 carbs, 3 fiber and 2 net carbs per serving so using that, it isn’t TOO bad spread over 12 fat bombs. They are still only 1 net carb each. That is OK as long as we know.

A tip for stirring the peanut butter:

Here is a hint for those “stir” brands, because they are not so easy to stir when they are in a full jar. Pour the oil out into a bowl and then scoop the peanut part out too.

Use a strong spoon or if you have it, a pastry cutter to mix it together in the bowl. It is so much easier when you have room to work. It doesn’t jump out of the jar and make such a mess that way.

When it is nice and smooth, scoop it back into the jar or use it for your recipe. This is a game changer, guys!

The jelly:

Yes, I know this is not a Keto approved jelly. There are several ingredients in here that I do not want to eat a lot of; maltodextrin, sucralose and artificial colors especially.

BUT each fat bomb has ½ of a teaspoon in it and I eat one at a time and I eat one every once in a while; not even every day. For me, this is fine. You must make your own decision if it is OK for you.

If you can find a Keto approved jelly, that is even better and please drop me a comment and let me know what you use. I would love to know!

I did find this Sugar Free Strawberry Jelly that looks really good but haven’t tried it yet.

Exchange the red raspberry preserves for whatever flavor you prefer.

Could I use salted butter?

Yes, just reduce or omit the salt in the recipe

Could I use a different sweetener?

Yes, use an equal part of whatever sweetener you like. The nutrition information will not be correct so you will have to readjust it if it is important to you.

Note on carbs:

Nutritionix doesn’t deduct the Erythritol from the carbs so net carbs would be 1 gram.

Based on a yield of 1 cup divided equally among 12 fat bombs, and using the exact ingredients I used, each contains 142 calories, 14g fat, 2.6g protein, 6.5g carbs, 4g carbs from Erythritol, 1.5g fiber, = 1 g NET CARBS  each bomb.

Ingredients:

peanut butter

coconut oil

unsalted butter

erythritol

vanilla

salt

sugar free red raspberry preserves

Directions:

First, melt peanut butter, coconut oil and butter in microwave 30 seconds at a time, stirring after each until smooth and blended. You could also melt in a double broiler on the stove. Usually it takes only 30 seconds in the microwave to melt enough to blend.

Add sweetener, vanilla and salt and blend well again.

Pour into mini muffin tin or molds of your choice.

Add ½ tsp of jelly to middle each bomb.

Freeze for 30 minutes or until completely hardened.

Pop them out with a sharp knife, being careful not to scratch your pan.

So I just started Keto and a bakery I frequent makes these. They are amazing. I spent today trying to replicate them. I know they use PB2 in theirs. Do you think if I reconstitute the PB2 with water and then follow your recipe, it would turn out? Also- I tried using the liquid coconut oil. Should I start with the solid coconut oil and then melt with butter and peanut butter

Hi Shannon, Hmm, I'm sorry that I haven't worked with PB2 before so I really don't know how it would work in this recipe. If you try it, please let me know. Having a Keto bakery nearby sure sounds nice! :) As far as the coconut oil, I don't know why starting with the liquid wouldn't work but again, I haven't done it that way so I am not certain. Melting the solid is how I did it for this recipe so the only way I am sure it will work. It does seem like starting with the liquid would be fine but I'm sorry I can't tell you for sure.
