Beefy Lentil Soup is a delicious dairy and gluten free soup that is great to have made ahead in the freezer!
Beefy Lentil Soup is one of my go to recipes. It is easy to make and freezes great to have on hand for an easy meal later or company.
I also have a low carb version that I often make at the same time; beefy cabbage soup. It is the same thing without the lentils or carrots; still delicious.
I will sometimes make a double batch to can some up for the pantry. Freezing is great but it has to be thawed and if it is canned, it can be grabbed off the shelf and is ready to go. Pressure can at 10 lbs pressure; quarts 90 minutes and pints for 75 minutes.
You could make it in the crock pot too; just use half as much water.
