Crock Pot Steak Fajitas is an easy to put together Low Carb, Dairy and Gluten Free Delicious Meal! It is a great freezer meal or meal prep!
I admit that when I first made Crock Pot Steak Fajitas, I thought it would like most steak and pepper crock pot recipes but oh my!
This is SO delicious!
It is moist, tender and has a wonderful flavor.
My notes when I made this was A+++.
My guys ate it on a soft flour tortilla but I am eating low carb so just put mine in a bowl. I did not feel like I was missing a thing!
We topped it with shredded cheese and since we didn’t have sour cream (oops, my bad), we made do with cream cheese. We decided that was a FINE substitution.
It would also be good with fresh lime juice, jalapeno peppers, avocado or cilantro.

I got this recipe from 100 Days of Real Food’s Slow Cooker Flank Steak Fajitas and made some changes to make it a bit easier.
One way I do that regularly is to use frozen vegetables like peppers and onions and bottled minced garlic.
Fajita Seasoning Mix Shortcut
I make this often so made up a mix of fajita seasoning to have a quick shortcut. I do that with anything I can!
Just add 10 times as much cumin, chili powder, salt and pepper as the recipe calls for to a jar and that is my mix; so easy! When I want to make fajitas, I pull out my jar instead of measuring out 4 things.

Ingredients:

flank steak (or london broil works fine too)
cumin powder
low sodium soy sauce
green chilis
chopped bell peppers
chopped onion
Instructions:
Combine chili powder, cumin, salt and pepper and sprinkle over steak.

Rub spices into meat well.

Put steak into greased crock pot.
Add soy sauce, chilis, garlic, peppers and onions. (My peppers and onions were even still a little
frozen.)

Cook on high 5-6 hours or low 8-10.
Shred meat with 2 forks and combine all together.

Serve on soft flour tortilla with cream cheese, sour cream, avocado, lime, cilantro or hot peppers.

For a low carb option, serve in a bowl with any of the listed toppings.

- 1.5 pounds flank steak (or london broil works fine too)
- 1 1/2 tsp chili powder
- 1 tsp cumin powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp low sodium soy sauce
- 1 7 oz can green chilis
- 2 Tbsp minced garlic
- 2 cups chopped bell peppers
- 1 cup chopped onion
Instructions
Gather your ingredients.
