Freezer Chicken Cacciatore

Freezer Chicken Cacciatore is an easy freezer meal to assemble, cooked in the crock pot, low carb, gluten free and dairy free!

Freezer Chicken Cacciatore is one of the freezer chicken recipes I always like to have in the freezer.

It is slightly spicy, hearty and flavorful.

I cook rice on the side for those who want it but it is plenty good as its own low carb self.

If you don’t like spicy, change the diced tomatoes with green chilies to just plain diced tomatoes.

Ingredients:

boneless, skinless chicken breasts

onion, sliced

bell pepper, sliced

can mushrooms, drained or fresh mushrooms

minced garlic

tomato paste

diced tomatoes with green chilies, with liquid

red cooking wine

water

basil

oregano

salt

pepper

To freeze: Put chicken, onion, pepper and mushrooms into a labeled Ziploc freezer bag. Combine the other ingredients and pour over chicken and vegetables. Lay flat and freeze.

To cook: Thaw or at least mostly thaw and put in a greased crock pot. Cook 4-6 hours on high or 6-8 hours on low.

Freezer Chicken Cacciatore is an easy freezer meal to assemble, cooked in the crock pot, low carb, gluten free and dairy free!

Total Time 6 hours 10 minutes

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 8 oz can mushrooms, drained or ½ pound fresh mushrooms
  • 1 Tbsp minced garlic
  • 12 oz can tomato paste
  • 2 10 oz cans diced tomatoes with green chilies, with liquid
  • ¼ cup red cooking wine
  • 1 cup water
  • ½ tsp basil
  • 1 tsp oregano
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

To freeze:

Put chicken, onion, pepper and mushrooms into a labeled Ziploc freezer bag.

Combine the other ingredients and pour over chicken and vegetables.

Lay flat and freeze.

To cook:
