I just love that they are ready to eat when we walk in the door at dinnertime!
They take just a few minutes in the morning to assemble. They can also be made ahead and frozen!
At .1 carb per meatball, they are a great choice for a Keto or Low Carb diet.

The ground beef:
My meat came in a 2.25 pound package. I have no idea why they do that but that is what they had. (Edit; I recently had 2 kind readers point out that 2.25 pounds is 1 kg so that is why, I guess. It isn’t labeled as a kg; it is labeled as 36 oz and 2.25 lbs; still strange if you ask me. It seems like if it is a kg, it would be labeled as such. Anyway!)
If you use two 1 pound packages, that is fine too. The cheese and egg measurements will still work just fine.
I don’t bother with seasonings but if you want to add salt and pepper or a steak seasoning to add more flavor, feel free. We always eat them with something else so have not felt it was necessary.
I usually use the 93% meat and 7% fat (93/7) when I buy ground beef. Especially in this recipe when the grease will just sit in the bottom of the crock pot, I don’t want extra fat in it.
I can almost always find it marked down so it is not much more expensive than the fattier meat. I just throw the extra grease away anyway so don’t want to pay for it.
That is just me though; use whatever you like! 🙂
What to eat them with:
It is pictured here with Creamy Spinach Cheese Bake and made a delicious dinner and leftovers for lunch for a few days.

We eat them for dinner with zoodles or other low carb pasta and homemade spaghetti sauce, as Low Carb Parmesan Meatballs, (below)

covered with Easy Homemade Alfredo Sauce or with one of many creamy vegetable side dishes.
They are also delicious cold for lunch dipped in sugar free ketchup or Ranch dressing.
Yield; 24 meatballs
Ingredients:

ground beef
Kraft grated parmesan cheese
eggs
Directions:
Use hands to combine ingredients well.


Shape into 24 palm sized meatballs.


Add to greased crock pot.

No added liquid is needed.
Cook on high 4-6 hours or low 6-8 hours.

Remove with slotted spoon

Yield; 24 meatballs

- 1 cup Kraft grated parmesan cheese
- 2 large eggs
Instructions
- Use hands to combine ingredients well.
- Shape into 24 palm sized meatballs.
- Add to greased crock pot. No added liquid is needed.
- Cook on high 4-6 hours or low 6-8 hours.
- Remove with slotted spoon
Notes
Please note that these are only 3 ingredients and they are very plain meatballs. We eat them with a sauce or cheesy side dish that gives more flavor with them. If you are planning to eat them alone, you may wish to add some seasoning like salt and pepper or Italian seasoning, garlic powder, etc. The options are endless for seasonings!
