Easy Keto Peppermint Fudge: Just 5 ingredients and no cooking quickly mix up into a delectable pepperminty creamy treat at Christmas or any time!

This Easy Keto Peppermint Fudge will be a favorite for the whole family; Keto or not! It is light and refreshing and hard to eat just one!

I adapted an old favorite recipe that I have made for decades into a Keto version and it is just as good. That one was from Taste of Home and I always just made the peppermint layer. Looking at the recipe now, I had adjusted the measurements some over the years. So many people over the years have gotten that fudge as part of their Christmas gift or seen it as part of a cookie, fudge and bark plate. Mmm, good stuff! Well, the Keto version is just as good! Yay!

Can Easy Keto Peppermint Fudge Be Made Ahead?

Yes! I have made this fudge ahead for years and it even freezes great! Just put it in an airtight container; some plastic wrap around it inside for extra protection is great, and put it in the freezer. I have frozen it for a few weeks ahead and it tastes fresh for the holidays and when we had leftovers, I have frozen it for even a few months after.

Ingredients:

cream cheese, room temperature

Swerve confectioners sugar

heavy whipping cream

peppermint extract

crushed sugar free peppermint candies, like Starlight Mints

Directions:

Line a 6×9 or similar size pan with plastic wrap. Square or rectangular is best for cutting the fudge into squares. The plastic wrap will make it easy to get the fudge out after it chills.

Crush the candies. I put them in a Ziplock bag and gently hit them with the side of a hammer. It doesn’t take a whole lot of banging or you will have a mess!

Add all ingredients except for candies to bowl.

Mix together well. A spoon could be used but I find it easiest to just use my hands.

Mix in the crushed candies until it is all well blended.

Press mixture into the pan, using the back of a spoon to get it pressed into the corners and nice and smooth on the top.

Chill for 1 hour or until firm.

Gently remove fudge by picking up by edges of the plastic wrap and setting onto a cutting board to cut into squares.

Yield; 60 small squares

  • 4 oz cream cheese, room temperature
  • 2 cups Swerve confectioners sugar
  • ½ tsp heavy whipping cream
  • 1 tsp peppermint extract
  • 10 crushed sugar free peppermint candies, like Starlight Mints

Sadly I tried this using mascarpone (due to the cream cheese "shortage") and the sugar I used was 1/2 powdered swerve and 1/2 powdered Bocasweet. It was terrible. I really hate that cooling sensation that erythritol has and that's why I used 1/2 Bocasweet. Still no good. Threw the whole double batch out. From now on I'm only going to use Allulose or xylitol.

Oh no. :( Yeah, I wouldn't have used mascarpone I'm afraid. It is a bit different than cream cheese. Some other changes may need to be made to sub that. I haven't tried Bocasweet but it seems like it should work. I have used xylitol for things and that works well. I understand. The cooling sensation is a common dislike with the erythritol. Good for you for trying though. That is how we know if things work, right? :) I'm sure sorry it didn't work. It is a major bummer that cream cheese is so hard to find right now. Hi Susann, I'm so sorry for the delay in answering (I was sick). Because of the cream cheese, I don't think I would mail this. It is best kept refrigerated. This Keto Chocolate Peppermint Bark would be a great treat to mail though; no dairy and already broken into pieces. I hope my answer was in time to be helpful. Merry Christmas!

My granddaughter loves all things maple. Do you think it would work if you substitute maple and pecans for peppermint?

Hi Debbie! Wow, I think that would work and sounds like a great idea! I would try a half batch to start so not to waste ingredients in case it didn't turn out how you like but it does seem like it would work. I am assuming you mean equal parts of maple extract for the peppermint extract and equal parts of chopped pecans for the chopped peppermint. It sounds good! Please let me know if you do it and how it turns out! :)
