I am not a big dessert or sweet maker or eater but when I saw this recipe for Pumpkin Spice 90 Second Cake, I wanted to try it. Wow, I was not disappointed! I made it in a bowl instead of a mug and it was a great size to invert onto a plate for icing and serving.
Although I have done my best to find where this recipe came from, all I can tell you is that I adapted it slightly from a screenshot someone posted on Facebook. They said it came from Pinterest. I searched Pinterest and asked Google but have found nothing like it.
The Vanilla
The icing calls for vanilla but I am always so excited to get to the eating part that I sometimes forget to add it. I have not felt like it was missing it but when I remember, it is really good. It is labeled as optional.
The Sweetener
I have used xylitol and Pyure and they both worked great. (Caution: if you have dogs, xylitol is toxic to them!)
The Pumpkin Pie Spice
I also used my Homemade Pumpkin Pie Spice. Since there is not actually any pumpkin in the recipe, the pumpkin pie spice is important.

Cake Ingredients
almond flour
egg
baking powder
sweetener
melted butter
pumpkin spice
Cake Directions
Mix all ingredients in a microwave safe bowl
Microwave 90 seconds.
Invert onto a plate.
Cool slightly, slice and ice
Icing Ingredients
butter
cream cheese
Icing Directions
Microwave 30 seconds
Stir and add sweetener
Stir again
Add a splash of vanilla if you like (opt)

- 3 tablespoons almond flour
- 1 egg
- 1/4 teaspoon baking powder
- 1 tablespoon sweetener
- 1 1/2 tablespoons butter melted
- 1/2 teaspoon pumpkin spice
- 1 tablespoon butter
- 1 1/2 tablespoons cream cheese
- 2 tablespoons sweetener
Instructions
Cake
Mix all ingredients in a microwave safe container and microwave 90
seconds.
Invert onto a plate.
Cool slightly, slice and ice
Icing
Microwave 30 seconds
Stir and add 2 tablespoons sweetener
Stir again
Add a splash of vanilla if you like (optional)

Hi there! This recipe sounds very good and I want to try it. I have checked and can't find anywhere you've posted the wattage of your microwave oven. Please advise. Mine is 1200 watts and I don't want to overcook it. Linda

Hi Linda, This is a good question! My microwave is 1,000 watts so it would be good to start cooking yours for about 70 seconds and then check to see if it needs more time. Thanks for asking! I hope you love it! :) ~Cindy
