Twice Baked Cauliflower Casserole A delicious Low Carb and Gluten Free Side Dish

Twice Baked Cauliflower Casserole is a great low carb substitute for twice baked potatoes.

If you are expecting this to taste just like twice baked potatoes, you will be disappointed. If you are looking for a flavorful, low carb twice baked side dish, this is it; and it is GOOD! Twice Baked Cauliflower Casserole is delicious in its own right.

I happened to have a head of cauliflower but if you don’t have one on hand, a pound of frozen florets will do just fine. They would not need to be cooked as long.

I almost always use frozen cauliflower for this and all of my cauliflower recipes. It is always easier and usually cheaper. There are very few recipes that it would matter.

Bacon notes:

I almost always cook my bacon in the microwave. I have promised myself that I will never again cook it on the stove where it will splatter all over, I have to watch every minute and make such a mess.

It is so easy in the microwave! For crispy bacon, put slices on as many layers of paper towel as you have bacon slices, cover with about 2 layers and microwave approximately that many minutes. 

(For 4 slices of bacon use 4 layers of paper towels plus covering and cook about 4 minutes).

Microwaves vary so go a little less the first time but mine has always been about a minute per slice for the crispiness we like it.

This works for me every time. No mess and I don’t have to watch it; that is win-win to me.

I have heard the oven is also a great way to do it but this works so well for me that I haven’t tried it.

Ingredients:

1 large head cauliflower or about 1 pound of frozen florets

4 oz. cream cheese

½ cup sour cream

½ cup heavy whipping cream

2 Tbsp chives
6 slices bacon, cooked and crumbled

1 ½ cup sharp cheddar cheese

black pepper, to taste

 

Directions:

Preheat oven to 350*.

Cut cauliflower into small pieces.

Cook bacon until crispy.

Steam riced cauliflower until soft. Drain if needed. This is the simplest way but if you would like to use a fresh head of cauliflower, follow the directions below. 

Cook cauliflower until it is tender, about 10-15 minutes.

Drain and mash well with hand mixer or potato masher.

Mix in cream cheese, sour cream, heavy whipping cream, chives, pepper, crumbled bacon and 1 cup of the shredded cheese.

Spread evenly in a sprayed 9 x 13 baking dish.

Sprinkle with the rest of the shredded cheddar cheese.

Bake, uncovered, for about 30 minutes, or until hot and bubbly.

Ingredients

  • 2 10oz packages riced cauliflower
  • 4 oz. Philadelphia neufchatel cheese
  • ½ cup sour cream
  • ½ cup heavy whipping cream
  • 2 Tbsp chives
  • 6 slices bacon, cooked and crumbled
  • 1 ½ cup sharp cheddar cheese

Instructions

  1. Preheat oven to 350*.
  2. Steam riced cauliflower until soft.
  3. Mix in cream cheese, sour cream, heavy whipping cream, chives, crumbled bacon and 1 cup of the shredded cheese.
