Keto Mashed Cauliflower Much Like Potatoes really ARE so much like potatoes that it had to be in the name!
I will admit that I was surprised at how much they looked and felt like and yes, eating them with my meal, even tasted like mashed potatoes!
Yes, they do still taste like cauliflower some but it is not a strong taste. With other food, it is possible to believe you are even eating potatoes.
Either way, potatoes or cauliflower, this mashed cauliflower is delicious!
Why I Use Frozen Cauliflower for this Dish
I use a time and money saving trick in using frozen cauliflower. It is almost always cheaper than fresh and it is already washed and cut; perfect!
I just get the Walmart brand in the steamable bag so the cooking is super quick and easy, throw it in the food processor with the other ingredients and my mashed cauliflower is ready!
It is a nice, simple side dish.
So far, I have not had to drain the cauliflower. It has come out of the bag with no extra liquid.
If there is any extra liquid, be sure to drain it or even squeeze it out. You don’t want that in there to make runny mashed cauliflower.
I patterned this recipe off of my old time, family favorite special mashed potatoes recipe. I have made that for many years; ahem, decades. It is hard to watch the family eating that when I cannot but now I have my Keto Mashed Cauliflower Much Like Potatoes! 🙂
Now I can have this wonderful cauliflower and really not feel like I am missing out! Oh, that is nice!
What to serve with Keto Mashed Cauliflower Much Like Potatoes
I always liked those potatoes with Adobo and Frank’s hot sauce and like this mashed cauliflower with them too. Yum!
They are pictured here with Crock Pot Garlic Herb Chicken and Roasted Parmesan Asparagus. It was a delicious meal!

Ingredients:
frozen, steamable cauliflower florets or 2 1/3 cup florets
cream cheese
sour cream
butter
Adobo seasoning or salt, pepper and garlic powder to taste
Directions:
Steam the cauliflower in a microwave according to package directions. I do mine 8 minutes so it is nice and soft.
If there is any liquid at all, drain or squeeze it out of the cauliflower. So far with steaming it like this, I have not had any or had to do this step.
Put all ingredients into food processor and puree until smooth, about 30 seconds.
Scrape sides if needed and puree another 10 seconds or so.
Heat through in microwave.
Garnish with chives, bacon bits or cheese if desired.
Makes 1 ½ cups, 3 servings of ½ cup each

- 12 oz bag frozen, steamable cauliflower florets or 2 1/3 cup florets
- 2 oz Philadelphia neufchatel cheese
- ¼ cup sour cream
- 2 Tbsp butter
- ¼ tsp Adobo seasoning or salt, pepper and garlic powder to taste
Instructions
- Steam the cauliflower in a microwave according to package directions. I do mine 8 minutes so it is nice and soft.
