Low Carb Chicken Broccoli Alfredo Casserole; A Perfect Creamy Blend of Chicken and Broccoli in a Simple Homemade Alfredo Sauce
When your husband sits in his chair in the evening and sighs with the statement, “That was REALLY good!” still remembering his dinner, you know you landed on a great recipe! Low Carb Chicken Broccoli Alfredo Casserole is that recipe!
This recipe is low carb, gluten free, and kid friendly.
The prep dishes can be washed while the casserole is in the oven so after dinner clean up is a breeze. That is one of my favorite things about a casserole!
I have seen the question from many of how to hide vegetables from the kids; this is a perfect recipe for that. Cook the broccoli on the softer side and it will blend right in.
If you want more of a variety of vegetables in your casserole, do half broccoli and half cauliflower.
In the video I used chicken from How to Make Chicken Broth and Have Cooked Chicken for the Freezer. It was very easy to just thaw it and put it in the casserole.
Crock Pot Garlic Herb Chicken would also work very well (it is very easy to make extra), as would rotisserie chicken, grilled chicken or even canned chicken. You just need about 3 cups of shredded (or even cubed if you prefer) meat.
If you are in an extreme pinch for time, you could use a jar of Alfredo sauce instead of making your own but I really don’t recommend that. You will be missing out on the good, clean ingredients of homemade and you just simply can’t beat the flavor of this sauce.

Ingredients:
(The sauce)
butter
Philadelphia Neufchatel cream cheese
garlic powder (affiliate link)
heavy whipping cream
grated parmesan cheese (affiliate link)
black pepper (affiliate link)
(The casserole)
cooked, shredded chicken
broccoli florets, steamed to your liking
shredded parmesan cheese
Directions:
Melt the butter in a saucepan over medium heat.
Add the cream cheese and garlic powder (affiliate link) and stir with a wire whisk until it is smooth.
Add the cream a little at a time while continuing to whisk.
Stir in 1 ½ cups parmesan cheese and pepper (affiliate link).
This is your Alfredo sauce. Set aside.
Spread the chicken on bottom of sprayed 9×3 casserole dish.
Spread broccoli over chicken.
Cover broccoli with Alfredo sauce.
Sprinkle remaining parmesan cheese over casserole.
Bake at 350* for about 20 minutes or until heated through.
Makes 10 servings.

- 36 oz broccoli florets, steamed to your liking
