One of our favorite meals is Skillet Chicken Florentine. You need only a skillet and 6 simple ingredients to make this delicious meal!
We all like spinach and chicken and we all REALLY like creamy, cheesy sauce on anything. This is all of that.
This makes a lot so half the recipe if you want.
I make a big batch in the pictures because it is wonderful warmed up for lunch the next day. See the video for a single batch.
I love that it is made in one skillet. Who has time to wash a bunch of pots and pans, anyway?
For that matter, if you HAD time, who WANTS to?! Not me!

This is adapted from Dana Carpender’s book, “500 Low Carb Recipes”.

Ingredients for double batch for leftovers/meal prep:
chicken tenderloins (or breasts cut into strips)
Extra virgin olive oil
frozen chopped spinach, thawed
heavy cream
Directions:
Season the chicken with salt and pepper and cook in olive oil over medium heat until a little bit browned.
They do not have to be cooked through.
Remove the chicken from the skillet.
Add a little more olive oil and the spinach and garlic. Cook and stir for just a few minutes.
Stir in the cheese and cream and combine it all well.
Spread the spinach mixture over the bottom of the skillet and add the chicken on top.
Cover and cook on low for about 15 minutes or until chicken is cooked through.
It should be at a gentle simmer.
This makes a lot so half the recipe if you want.

- 2 pounds chicken tenderloins (or breasts cut into strips)

- 12 oz bag frozen chopped spinach, thawed
- 1 Tbsp minced garlic
- 1/4 cup grated parmesan cheese
- 3/4 cup heavy cream
Instructions
Season the chicken with salt and pepper and cook in olive oil over medium heat until a little bit browned. They do not have to be cooked through.
Remove the chicken from the skillet.
Add a little more olive oil and the spinach and garlic.
Cook and stir for just a few minutes.
