Crock Pot Beef and Broccoli Freezer Meal is a delicious Low Carb, Gluten Free, Dairy Free Freezer to Crock Pot meal!

Crock Pot Beef and Broccoli Freezer Meal is great to have in the freezer. It is easy to serve over regular rice or for a low carb version, cauliflower rice. I give both options at my table and it is still a very easy meal to put on the table.

When meat is on sale, it is easy to come home and make up a few meals for the freezer. Most of my freezer meals do not require cooking the meat first so it just includes labeling a bag, putting in the meat and pouring more ingredients on top. It does not have to be a huge, exhausting day long session to have some extra meals ready to go. This one is great for that!

Ingredients:

thin chuck shoulder steak (or any similar cut)

beef broth

arrowroot powder (or cornstarch if not low carb)

red cooking wine

apple cider vinegar

crushed red pepper flakes

soy sauce

olive oil

minced garlic

frozen broccoli

To Freeze:

Place steak into a labeled gallon Ziploc bag.

Whisk together all other ingredients except for broccoli and pour over steak.

Seal, getting as much air out of the bag as possible.

Freeze flat so the liquid is all over the meat.

Freeze broccoli separately from the meat mixture.

To Cook:

Thaw at least mostly and add all ingredients except broccoli to greased or lined crock pot.

Cook on low for 6-8 hours or on high for 4-6 hours. Check half way through and add more liquid if needed.

Add broccoli for the last hour of cooking. If you don’t mind the broccoli very soft, it can be added in the beginning.

**This of course does not have to be frozen before cooking but freezing the meat in the marinade makes it more tender.

Ingredients

  • 1-1 ½ pound thin chuck shoulder steak (or any similar cut)
  • ½ cup beef broth
  • 1 Tbsp arrowroot powder (or cornstarch if not low carb)
  • 2 Tbsp red cooking wine
  • 2 Tbsp apple cider vinegar
  • ½ tsp crushed red pepper flakes
  • 2 Tbsp soy sauce
  • 1 Tbsp olive oil
  • 2 tsp minced garlic
