Broccoli and Cauliflower Cheesy Bake; Healthy vegetables in a cheesy sauce but also simple and quick to put together for a side dish the whole family will love!

Cheese just goes with broccoli and cauliflower so Broccoli and Cauliflower Cheesy Bake is going to be good!  

We like our vegetables anyway but adding cheese is always a treat. For anyone who is not crazy about their vegetables, cheese will help them go down more easily.  

This is a great low carb dish that I eat instead of macaroni and cheese. It is just as tasty and so much healthier! 

When we are going to someone’s house for dinner or a potluck and asked to bring a side dish, this is one of my favorite things to bring! I have it in the casserole dish and all ready to put into the oven when we get there and usually already at least partially hot.

It is always a hit and I know I will have something I can eat and will enjoy!

This is simple to put together; just melt some cheeses, add thawed, frozen vegetables and pour it into a dish to bake. It will bake as you cook the meat or prepare the rest of the meal. 

Broccoli and Cauliflower Cheesy Bake goes very well along a plainer meat like  Crock Pot Garlic Herb Chicken, Low Carb Not Breaded Chicken, Crock Pot Beef Shanks or Grilled Marinated London Broil.

Ingredients:

frozen broccoli florets, thawed

frozen cauliflower pieces, thawed

butter

shredded cheddar cheese

Neufchatel cheese

heavy whipping cream

garlic powder

to taste salt and pepper

Instructions:

Melt the cream cheese, 2 cups of shredded cheddar cheese and butter in a microwave safe bowl. I did 1 minute, whisk, 1 minute, whisk and another 30 seconds, whisk.

Add the heavy whipping cream and whisk that into the cheese mixture. It should look like a cheese sauce when you are finished.

(I did not cook the vegetables and they were still a bit crisp the first time. If you like your vegetables soft, you will want to steam or boil them a bit before adding them to the cheese sauce. We have decided that we like them steamed before adding them to the casserole.)

Be sure any extra water is drained from the vegetables.

Add the broccoli, cauliflower, garlic powder and salt and pepper to the cheese sauce and gently stir together.

Spread into a greased 9 X 13 baking dish.

Sprinkle with the last cup of cheese or more if desired.

Bake for 30 minutes, covered, in preheated 400* oven.

Uncover and bake another 10-15 minutes so the cheese will brown.

Notes:

This recipe previously called for 2 one pound packages of frozen vegetables but they are getting harder to find. I have been using 3 packs of 12 oz and that works just fine too so I changed the recipe to use those. It is only a difference of 4 oz and it does not matter. Use 2 broccoli and 1 cauliflower or 1 cauliflower and 2 broccoli or 3 of the same; whatever you like. Use whatever size bags you can find or want to use.

  • 2 12 oz bags frozen broccoli florets, thawed
  • 1 12 oz bag frozen cauliflower pieces, thawed
  • 4 Tbsp butter
  • 3 cups shredded cheddar cheese
  • 8 oz Neufchatel cheese
  • 1 1/2 cups heavy whipping cream
  • 1/2 tsp garlic powder
  • to taste salt and pepper

Can this be prepared a day before and cooked the day it's needed? Trying to minimize Thanksgiving day prep.

Hi, I have not prepared this one ahead like that but have done it with others that are similar. I would think you could. Just bake it a bit longer since it will be cold to start. :)
