Keto Chocolate Peppermint Bark: Four simple ingredients come together quickly to create a beautiful crowd pleasing treat you will be proud of! Bark is one of the easiest things to make!

Bark is my absolute favorite thing to make for Christmas because it is so pretty and everyone loves it. Ok, the real reason it is MY favorite is because it is so easy. Really; melt some stuff, stir it up, spread it on a baking sheet, let it chill and break it into pieces. It is ready! You just can’t get any easier than that. This Keto Chocolate Peppermint Bark is just that easy!

I have made full sugar bark for decades and wanted to try my hand at Keto bark. This is my first try and wow, I am not disappointed. I couldn’t go wrong with chocolate and peppermint combination, that is for sure!

The chocolate chips:

Semi-sweet chips

I use Lily’s semi-sweet chocolate chips over the milk chocolate and even the dark chocolate because they are the lowest carbs of the three. I have added the option of liquid Stevia to the bark if they are not sweet enough for you. It is easy enough to taste it before chilling to see if you think it needs the extra sweetener or not. I personally like it not so sweet and do not add it but put that option there for those who might.

Lily’s brand chips

I personally think Lily’s brand is best over others like Hershey’s sugar free chips because they use Stevia instead of Maltitol or other sweeteners that are known to raise blood sugars. They can be harder to find but more stores are stocking them all the time. I have found them in Kroger and Walmart and Amazon will ship them. If you can’t find Lily’s or if you prefer another brand of chips, they will work just fine for the recipe.

 

Can Keto Chocolate Peppermint Bark Be Made Ahead?

Yes! I have made bark ahead for years and it even freezes great! Just put it in a Ziploc bag and put it in the freezer. I have frozen it for a few weeks ahead and it tastes fresh for the holidays and when we had leftovers, I have frozen it for even a few months after.

Ingredients:

Keto Chocolate Peppermint Bark ingredients

Lily’s semi-sweet chocolate chips

coconut oil

peppermint extract

sugar free peppermint candies, like Starlight mints

Liquid Stevia drops, to taste; optional

Directions:

Melt chocolate chips and coconut oil in microwave for 30 seconds, stir and heat 30 seconds again if needed. Heat just until melted when stirred.

If you would rather, melt them over a double boiler on the stove.

Crush the candies. I put them in a Ziplock bag and gently hit them with the side of a hammer. It doesn’t take a whole lot of banging or you will have a mess!

Stir in the peppermint extract and about 2/3 of the crushed candies.

Spread the mixture onto a parchment paper lined baking sheet.

Sprinkle the remaining crushed candies over the bark mixture.

Chill 20 minutes or until hardened.

Break into pieces and serve.

Store in the refrigerator or freezer for best results.

The mixture could also be poured into molds and made into candies.

  • 1/2 tsp peppermint extract
  • 12 sugar free peppermint candies, like Starlight mints
  • Liquid Stevia drops, to taste; optional

Instructions

    1. Melt chocolate chips and coconut oil in microwave for 30
      seconds, stir and heat 30 seconds again if needed. Heat just until melted when stirred.
    2. If you would rather, melt them over a double boiler on the
