Keto Chocolate Covered Strawberries; An elegant dessert that says, “You are special” but also quick and easy to make, only 1.9 net carbs (for 2!) and only takes a few ingredients!

These Keto Chocolate Covered Strawberries are so quick to make but they look like you spent hours on them! Your guests and loved ones will feel special when you serve these to them. And the best part is that they are not full of sugar! They are only 1.9 net carbs for two of these beauties!

The almonds:

The almonds are not listed as optional but they really are. If you have an allergy or just don’t like them, feel free to omit them. They are part of the nutrition label. They do make them pretty and taste very good with the chocolate and strawberries though. I like to do about half with and half without the almonds. It is pretty that way and sometimes there are some who would prefer them without. If you will do them all with almonds, you may need a few more than listed.

Could I use different nuts?

Other nuts could be substituted if you like. Just crush them up and use them as you would the almonds.

The optional sweetener:

The optional sweetener is not part of the nutrition label as I do not know what you would use or if you would use it. Most of us at my house like these without any added. One of us would like them a bit sweeter. There is always one. 😊 If you add sweetener, add it after the chocolate chips are melted and before you dip the berries.

Can Keto Chocolate Covered Strawberries be made ahead?

Yes! You can definitely make these a day or so ahead of time. Store them carefully in a covered container. Don’t pile them on top of each other. Do not freeze them.

Keto Chocolate Covered Strawberries

Ingredients:

 Lilly’s brand semi sweet chocolate chips

 coconut oil

 almonds

 liquid Splenda or your choice of sweetener, optional

Directions:

Wash your berries and dry them well. Leave the stems on. They give you something to hang onto and are pretty for serving.

Melt the chocolate chips and coconut oil in a double boiler on stove or microwave until melted. I used the microwave and did 30 seconds, stirred then another 20 seconds.

Crush the almonds.

3 glass bowls with strawberries, melted chocolate and chopped walnuts

Use forks or toothpicks to dip and swirl the berries through the chocolate, letting the excess drip off.

Dip into the crushed almonds or sprinkle them over the covered berries, whichever you prefer. Sprinkling will give you a lighter coating of almonds.

Carefully place the berries onto parchment or wax paper lined baking sheet and chill until ready to serve.

Notes:

The chocolate will cling to the berries much better if they are good and dry. Make sure you dry them well.

Being at room temperature is also best. The chocolate will not cling as well to cold or damp berries.

As you get to the end of the chocolate, it is a bit harder to make the strawberries look nice. I save those for the ones I will cover with the almonds to cover that.

  • ½ pound of strawberries, about 12 large berries
  • ½ cup Lily’s semi sweet chocolate chips
  • 1 tsp coconut oil
  • 1/8 cup almonds, about 16 almonds
  • 1 tsp or more liquid Splenda or your choice of sweetener, optional

I followed the directions but the Lilly’s chocolate solidified quickly and was undippable. Berries were warm and dry but the chocolate didn’t stay glossy and thin for very long at all.

Hi Diana, It could be that the air temperature in one house was different so it cooled off quicker or that one microwave warmed the chocolate warmer in the first place. If it isn't dippable, just warm it a bit again and stir until it is good to dip again and repeat as necessary. Just watch that you don't overdo and burn it. Heat about 15-20 seconds at a time and stir between to see how it is. I hope this helps!
