Keto Zoodles with Meatballs and Marinara Sauce: Good old spaghetti and meatballs but with healthy zucchini noodles and low carb, gluten free meatballs and sauce.

There is nothing like spaghetti and meatballs. Keto Zoodles with Meatballs and Marinara Sauce is not exactly like spaghetti and meatballs but it is very close!

The Meatballs:

Our favorite meatballs are my 3 Ingredient Keto Crock Pot Meatballs. They are delicious so we like them for that reason and I like them because they are easy to make! I also like them because as the cook, I can make them ahead. I make a big batch and freeze several to take out as many as I need later. It is very easy to take out 6 for this recipe.

The sauce:

We like my homemade Spaghetti and Pizza Sauce; either a smaller batch made in the crock pot or a larger batch for the freezer. It is low carb and all ingredients that I know what is in there. Most of the ingredients are herbs and spices that I mix up ahead so it is so easy to just dump them in with the tomato sauce and meat when I want to make the sauce. Easy-peasy! There are some sauces that you can buy also if that is what you like; Rao’s is a good one.

How do you cook zoodles?

I put them into boiling water for just a couple of minutes. We like them soft like noodles but not mushy. Don’t cook them long though or they will definitely get mushy fast! Some will salt them and let them sit for 30 minutes or so and then squeeze out extra water before sautéing a skillet with butter, olive oil or coconut oil for a few minutes; again, just a few minutes! Others will not cook them at all and count on the hot sauce to warm them enough. That is too crunchy for our preference. These are some ideas. You will have to try it and see how you like it done best.

Directions:

Make your zoodles and cook as you like them.

Divide your zoodles into two bowls.

Cover with some of the sauce but save some for the meatballs.

Add meatballs and the rest of the sauce.

Ingredients

  • 2 cups zoodles
  • 1 cup marinara sauce
  • ½ cup shredded mozzarella cheese
  • 6 meatballs

Instructions

    Make your zoodles and cook as you like them.

    Divide your zoodles into two bowls.

    Cover with some of the sauce but save some for the meatballs.

    Add meatballs and the rest of the sauce.

    Sprinkle with shredded mozzarella cheese.

    Serve.

Could I use frozen Italian meatballs instead of making my own to save time?

Hi Jean! Sure, you could use frozen meatballs. The challenge with those is getting them with good ingredients and a low carb count but if you can find ones that fit what works for you, go for it! Many people need to avoid wheat and/or soy so it isn't usually easy to find them and making our own is our best option when that is the case. I like to make a big batch so I have my own frozen ones on hand when possible. :)
