Low Carb Crock Pot Corned Beef and Cabbage; Our St. Patrick’s Day favorite as an easy, low carb version! Only 4 ingredients and 5 net carbs!

Traditionally, corned beef is cooked and served with potatoes. To keep Low Carb Crock Pot Corned Beef and Cabbage low carb, I serve it with Keto Mashed Cauliflower.

It is absolutely NOT a hardship to make that change! That thick and creamy mashed cauliflower is amazing!

Does this meal look like I felt deprived? Um, nope! 🙂 

If you would prefer a potato like vegetable cooked with your meat, let me suggest either radishes or turnips. I have personally used radishes with a roast (See Keto Pork Tenderloin with Radishes) and they work great and have seen others use turnips and really like them.

TIP for the spices:

One great tip I have for cooking the corned beef is to put the spices in a tea ball.

The first time I made Low Carb Crock Pot Corned Beef and Cabbage, we loved the flavor that the spices gave but did not enjoy biting into a random allspice berry or mustard seed.

Putting the spices into a tea ball still allows all of the flavor to cook into the meat and vegetables but also allows the spices to be easily removed after cooking. We were all very happy with this change in the process.

This is totally optional of course. If you like the spices throughout, there is no need to put them in the tea ball.

Nutrition

Here is a very basic idea of the carb count for this recipe. If you need to be exact, the best thing is to add it into your tracking app with the exact size of your brisket and cabbage. 

As written, this serves about 12 with 4 oz of meat and cabbage to go with the meat.

About 4 net carbs per serving if you don’t eat any of the onion

About 5 net carbs per serving if you eat about 1 Tbsp of the cooked onion

Ingredients:

corned beef brisket

green cabbage

onion

water

Directions:

cabbage cut into fourths
cabbage sliced

Cut cabbage into chunks and onion into slices.

Spray crock pot with non stick spray.

Layer cabbage and onion on bottom of crock pot and pour water over.

Lay corned beef over cabbage and onion.

Sprinkle spices over beef OR put them into a tea ball if you would rather not have them through your meal. They can easily be removed that way.

Cook on low 6-8 hours or high 4-6 hours.

If you used a tea ball for the spices, remove before serving.

Ingredients

  • 3 lb corned beef brisket
  • 3 lb green cabbage
  • 1 medium onion
  • ½ cup water

Instructions

  1. Cut cabbage into chunks and onion into slices.
  2. Spray crock pot with non stick spray.
  3. Layer cabbage and onion on bottom of crock pot and pour water over.
  4. Lay corned beef over cabbage and onion.
  5. Sprinkle spices over beef OR put them into a tea ball if you would rather not have them through your meal. They can easily be removed that way.
  6. Cook on low 6-8 hours or high 4-6 hours.

**Nutritional info was recalculated by hand using the label on my corned beef and info on cabbage and onion and divided by 12 servings on 5/25/22. The carb counts were very, very close (a little high actually), but calories, sodium, fat and protein were calculated too high by Nutritionix for some reason.
