Low Carb Crock Pot Chicken & Cream Cheese Sauce is the convenience of the crock pot, tender chicken, creamy sauce, low carb and gluten free!
Low Carb Crock Pot Chicken & Cream Cheese Sauce is so easy! Add just 5 ingredients in the morning and add one more before serving to make the sauce.
The sauce comes together while you make a vegetable and dinner is ready.
One evening I forgot this was a crock pot meal and realized we were an hour from dinner and I had not started it that morning. Yikes, hate when that happens! I baked it in the oven at 400* for about 40 minutes and it was very good that way too. The crock pot did make the chicken more tender but it worked just fine.
This makes a good amount of sauce that goes nicely on cooked vegetables too. It is pictured with Roasted Parmesan Asparagus.
Some other great sides are:
2 pounds chicken breasts
1 medium onion, sliced
1/2 stick butter
1 heaping tsp minced garlic
1 tsp salt
8 oz cream cheese
1 cup chicken broth (from cooking juices)
Add chicken, butter, garlic, salt and onion to greased crock pot. You do not need to add any liquid.
Cover and cook on low for 6 hours.
OR add chicken, butter, garlic, salt and onion to greased baking dish. (Some of us don’t like onion so I only put it on half.)
If baking in oven, bake in preheated 400* oven for about 40 minutes or until chicken is done.
Remove 1 cup of broth from the cooked chicken and put in saucepan. Add the cream cheese and a little salt if desired.
Break up cream cheese and whisk into broth while on low heat. You do not want it to simmer at all; just enough to melt the cheese into the broth to make a nice sauce and heat through.
Pour sauce over chicken.
